1)Parmigiano Reggiano with DOP certification can be produced not only in our province but also in those of Parma, Modena, Mantova, and Bologna.
2) Aging must range from a minimum of 12 months to a maximum… as you prefer! You can even find varieties of cheese aged up to 72 months!
3) Did you know that to produce a wheel of 30 kilograms, a whopping 500 liters of milk are needed?
4) The best pairings are, of course, with balsamic vinegar, pears, various local mustards, but also with chestnut honey and kiwi.
5) The recommended wines to fully appreciate its potential are Reggiano Lambrusco, a good Sparkling wine, Malvasia from the hills of Parma, and, lastly, a delicate Champagne.
