“Ping’s Bread”, produced by Panificio Melli, is a type of bread created according to traceability standards. n 2010, the Agriculture Department of the Province of Reggio Emilia presented the “Pan de Re” project aimed at producing controlled-quality bread using a short supply chain approach, derived from integrated production that respects the environment and health. This allows consumers to trace the origins of the bread, from the cultivation of the cereals to the milling of the flours and the baking process. At the Melli bakery, you can find these loaves distinguished by the “King’s Bread” label, certifying their Controlled Quality.
