The Erbazzone prepared according to the traditional Reggiano recipe. It’s a gastronomic specialty typical of Reggio Emilia, where it’s known as ‘Scarpasòun’ (Scarpazzone) because in its preparation, the humblest farming families, from which the recipe originates, used even the white stalk, the ‘scarpa’ of the chard.
