The origins of the Reggiano tortelli recipe date back at least to the Late Middle Ages. The fresh pasta with filling was created with the purpose of gathering what little the peasant cuisine provided into a single dish. Thus, the union of homemade fresh pasta and a vegetable filling, easily available, gave birth to a tasty, imaginative, and delicate dish suitable for festive days.
