The Cappelletti from Panificio Melli are prepared according to the typical recipe of Reggio Emilia, with a small shape and an unmistakable taste. Tradition sees them cooked in capon broth, often accompanying Sunday lunches for the people of Reggio, and they are always present on our tables on Christmas day.
The dish is part of the tradition of all of Emilia Romagna, where they are called “caplèt” for their characteristic shape resembling that of a hat. Known since ancient times, for instance, a cookbook was found in the archives of an ancient noble family of Lugo, written by Count Giovanni Manzoni, which mentions seven different recipes for cappelletti.
